1/2 cup shortening
1 cup packed brown sugar
1 eggs
1/2 cup maple syrup
1/2 tsp vanilla
1-1/2 cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup flaked coconut

Preheat oven to 375. Grease cookie sheets. In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the eggs, syrup and vanilla until well mixed. Combine flour, baking powder and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoons 2 inches apart on greased cookie sheets. Bake 10-12 minutes.
