Maple/Lime Zucchini Bread

3 cups shredded zucchini
1 1/2 cups maple syrup
2 eggs
1 cups vegetable oil
3 cups whole wheat flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
2 tsp. ground cinnamon
2 tsp. lemon or lime juice

- Preheat oven to 325°.
- Grease 2 loaf pans.
- In a bowl, beat together the flour, salt, baking soda and baking powder.
- Stir in cinnamon and lime juice.
- Stir the flour mixture into the zucchini mix. Mix until blended.
- Pour into prepared pans.
- Bake for approx. 60 mins. or until knife inserted comes out clean.
