Maple Syrup Muffins

2 cups sifted whole wheat flour
1/4 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1/4 cup butter, softened
1 egg
1/2 cup milk
1/2 cup maple syrup

- Preheat oven to 400°F.
- Combine flour, sugar, baking powder, and salt together in mixing bowl.
- Cut in butter until well-blended.
- Beat eggs, milk, and maple syrup and stir into dry ingredients just until blended. DO NOT OVERBEAT!
- Fill paper-lined muffin tins 2/3 full.
- Bake for 20 mins.

Yield: 12 muffins
